As requested-Carrot Pudding with Orange sauce

As promised, here is the recipe and directions for my dad’s carrot pudding with orange sauce. I hope you enjoy it as much as I do! 🙂


1/4 cup butter (melted)

1/2 cup brown sugar

1 beaten egg

1 cup grated carrots

1 tbsp orange rind grated

3 tbsp orange juice

1 1/4 flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp grated ginger (I used ground ginger, but feel free to use fresh)

(My new additions) Handful of walnuts and handful of raisins


1/2 cup sugar

1 tbsp cornstarch

1 tsp orange rind grated

1/2 cup orange juice

1/2 cup water

1 tsp lemon juice (to be added later)

For the cake-Mix butter and brown sugar. Add egg and beat until fluffy. Stir in carrots, orange rind and juice. Mix in dry ingredients plus walnuts and raisins and spread in 8-inch square pan. Bake at 350 F for 25 minutes or until a fork comes out clean when you stick it in the pan.

For the sauce-Mix sugar, cornstarch and orange rind in a pot on the stove. Gradually stir in juice and water. Cook until thick and clear, stirring constantly, over medium heat. Remove from heat and stir in lemon juice.

I like lots of sauce with my cake, so feel free to double the ingredients in the sauce recipe. 🙂
